Best spend some time resting on lees, adding roundness.
Made from the Hondarrabi Zuri white grape (aka Getariako Txakolina) which can be blended with other minor grapes from the Basque Country; Folle Blanche most common, followed by small amounts of Chardonnay, Pinot Blanc, Sauvignon Blanc & Riesling.
Great pairing with salty Basque seafood dishes like oysters or claims in parsley sauce.
