Oak-aging adds vanilla, toast & baking spices.

Super Tuscan red blend wines are from West Central Italy (Tuscany), often similar in style to Bordeaux Blends, but typically a bit more savory. Either pure Bordeaux varities e.g. Merlot, Cabernet Sauvignon or a blend of Sangiovese with those grapes e.g. Merlot, Cabernet Sauvignon or Syrah. Sangiovese adds acidity and slightly tangy red fruit flavors and higher acidity which make it somewhat more food friendly. The term is unregulated and may be a diverse blend of several grapes. Really a geographical marketing term not a standardized wine style.

BottleCru has two styles defined for Super Tuscans, Super Tuscan Sangio, for Sangiovese influenced blends (max 50% in the blend) and Super Tuscan Cab Merlot for Cabernet, Merlot (or Cabernet Franc) dominated blends (up to 100%).
