Coda di Volpe, Fiano, Falanghina & Greco
Each wine is distinctive but shares some basic style commonality. Medium yellow to light golden. Assertive aromas of riper citrus & some tropical fruits.
Flavors of sweet lemon, tangerine, green herbs & pronounced minerality. Dry wines with medium plus acidity with Greco being highest in acidity.
Typically no oak influence with a medium plus alcohol level & body.
These wines (especially Fiano) tend to improve with age, adding flavors of honey and nutiness.
Falanghina (aka Falanghina Greco) is the simplist, easy drinking wine, light fleshy with aromas of apricot, peach & pear. Fiano is the region's premier variety, with both light and full-bodied styles made. It is also the most complex with a distinctive palate coating volcanic ash texture. Greco & Coda di Volpe (Tail of of the Fox) are somewhere in between the easy drinking Falanghina and the more complex Fiano.
Serve cool to enhance a moderate acidity. Pairs well with salads with cheese dressings, creamed pastas & flavorful fish dishes.
